Vegetarian Baked Beans

2 cans Beans with Tomato Sauce, vegetarian
1 large onion, chopped
1/2 cup ketchup
1 teaspoon prepared mustard
4 tablespoons brown sugar, packed
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 teaspoon vegetable oil

Sauté onion in vegetable oil until translucent. Add canned beans in their sauce. Stir in remaining ingredients and transfer to a 1 1/2
quart baking dish. Bake at 350 degrees F for 20 minutes.

Per serving: 103 Calories (kcal); 1g Total Fat; (10% calories from fat); 3g Protein; 21g Carbohydrate; 0mg Cholesterol; 504mg Sodium; 3g Fiber

Contributor's note: A vegetarian version of pork and beans is available at most stores. They are usually small white beans cooked in a light, sweet tomato sauce. You can make your beans from dried if you have the time. Cook them in a little tomato juice and water with added sugar and salt.
