Taco Casserole

1 1/2 pounds extra lean ground beef
2 cups shredded monterey jack cheese
3 cups crumbled tortilla chips
1 1/4 ounces taco seasoning mix
1 large onion, chopped
1/4 cup sliced black olives
1 tablespoon chili powder
1 1/2 cups tomato sauce
2 1/2 cups water
6 cups shredded iceberg lettuce
1/2 cup light sour cream
2 large tomatoes, chopped

Preheat oven to 350 degrees F. In a large skillet, brown lean ground beef and onions. Drain any fat from mixture. Add taco seasoning, chili powder, tomato sauce, chopped olives and water. Simmer for 10 minutes. Gently fold
in corn chips and 2/3 of cheese. Transfer to a 9"x13" inch baking dish or large casserole dish. Sprinkle remaining cheese on top. Bake for 30 minutes.

Serve with lettuce, sour cream, and chopped tomatoes as desired.

Contributor's note: To reduce sodium, use low-sodium cheese, seasoning mix and tortilla chips.
