1 to 2 tablespoon flour 1 egg white 1 tablespoon vegetable oil 2/3 cup buttermilk 1/4 teaspoon baking powder 1/4 teaspoon salt 1 teaspoon sugar Combine dry ingredients. Combine liquid ingredients and add to dry mixture. Mix thoroughly. Place a cast iron corn-stick baking tray in a 400 degree F oven for 5 minutes. Remove the tray from the ovenand coat with a cooking spray. Spoon batter into each corn stick trough filling to the brim. Return to the oven. Cook for 10 minutes or until golden brown. Remove sticks from tray and wrap in a towel. Place in a lined serving basket. Serve hot. Contributors note: Pre-heating the pan is what gives your corn sticks that crunchy outer crust. If you don't have a corn stick tray, you may substitute a cast iron skillet. |
