2 - 9" pie crusts, baked 6 beaten eggs 2 1/2 cups milk 1/2 teaspoon salt 8 ounces cream cheese 3 cups grated Monterey Jack cheese 2 tablespoons flour 4 ounce can diced green chilies, drained Dash of nutmeg Prepare pastry for two single crust pies. (Or use prepared crusts.) Bake crusts until lightly brown. Blend eggs, milk, and salt in blender. Add cream cheese and blend lightly so that there are small chunks of cream cheese left in mixture. Mix grated Monterey Jack cheese and flour together and add to milk mixture. Drain green chilies on paper towel. Add to mixture; mix well. Pour into prepared pastry shells. Dust tops with nutmeg. Bake at 325 degrees for approximately 45 minutes or until knife inserted in center comes out clean. Cool for 15 minutes before serving. Makes 12 servings.
