Potato Patch Casserole Serves 4-61 lb. ground beef 1/2 cup chopped onion 1 egg 1/4 cup milk 1/4 cup breadcrumbs 1 tsp. salt 1.4 tsp. pepper 1/4 tsp. celery salt oil * * * * * * 2 T. margarine 2 T. flour 1 cup milk 1 1/4 tsp. salt dash of pepper 1/2 lb. Velveeta cheese spread, cubed 4 cups sliced potatoes 1- 10 oz. pkg. frozen peas & carrots, thawed ---------------------------- Heat oven to 350F. Combine meat, onion, egg, milk, breadcrumbs, & seasonings; mix lightly. Shape into 10 meatballs; brown in oil. Make white sauce with margarine, flour, milk, & seasonings. Add Velveeta; stir until melted. Combine potatoes & peas & carrots; place in 12X8" baking dish. Arrange meatballs around edge of dish; cover with Velveeta sauce. Cover dish with foil; bake at 350F, 1 hour. Uncover; continue baking 30 minutes.
