2 cloves, smashed 2 onions, sliced 6 green bell peppers, cut in 1 inch slices 8 sweet or hot Italian sausages Heat oil in a skillet & add smashed garlic and cook until it just begins to brown, remove and discard. Add onions to pan and cook until soft but not brown. Add peppers and salt to taste. Cover, & cook on low until soft, about 30 minutes. Prick sausages with a fork and cook in another skillet with a cup of water and cook until water evaporates and sausages brown. Put sausages with pepper mixture and simmer 5 minutes. |
