1 large onion, minced 2/3 ribs celery, minced 2/3 cloves garlic, minced 1 can (28 oz.) Campbell's Pork 'N' Beans 1 can (15 oz.) cannellini beans 1 can (15 oz.) garbanzo beans 2 cans (15 oz.) stewed tomatoes 1 teaspoon or so each of: basil oregano parsley 2 bay leaves In large soup pot, saute sausage, onion, celery and garlic till sausage is done (adding garlic last). Drain excess fat from sausage. Add Pork 'N' Beans, cannellini beans, garbanzo beans, and stewed tomatoes and bring to boil quickly. Immediately turn down to simmer, stirring as needed, add basil, oregano, parsley and bay leaves, plus salt and pepper to taste. Simmer covered for 20-30 minutes. Remove bay leaves (important!) and Great winter warm-up dinner! Also, you might want to sprinkle some shredded cheddar cheese on top of each serving bowl, and maybe a few garlic croutons when you serve this soup. |
