Golden Meatball Casserole Serves 4-61 lb. ground beef 1/2 cup fresh breadcrumbs 1 egg 1 tsp. salt oil 2 cups water 1 cup uncooked rice 2 large carrots, cut in quarters 1/2 cup chopped green pepper 1/4 cup chopped onion 1/2 lb. Velveeta cheese spread, cubed --------------------------------- Combine meat, breadcrumbs, egg, & salt; mix lightly. Shape into 18 meatballs; brown in small amount of oil on all sides in large skillet. Drain. Add water, rice, carrots, green pepper, & onion. Cover & simmer 25 minutes. Add Velveeta; heat until Velveeta melts.
