Enchiladas El Paso Serves 6-81 lb. ground beef 2 cups (1 lb. can) tomatoes 1- 6 oz. can tomato paste 1/2 cup water 1/2 cup chopped onion 1 T. chili powder 1 1/4 tsp. salt 1/4 tsp. pepper 2 cups (8 oz.) shredded sharp cheddar cheese 1- 8 oz. pkg. tortilla ------------------------------ Heat oven 375F. Brown meat; drain. Stir in tomatoes, tomato paste, water, onion, & seasonings. Simmer 10 minutes. Place rounded teaspoons of each, meat sauce & cheese, on each tortilla; roll up tightly. Place seam-side down in 12X8" baking dish; top with remaining sauce & cheese. Cover tightly with foil, bake at 375F, 25 minutes. This dish may be made ahead, covered & refrigerated overnight. Bake covered, at 375F, 50 minutes.
