Cool & Creamy Cheesecake Serves 8-101 cup graham cracker crumbs 1/4 cup sugar 1/4 cup margarine, melted * * * * * * 1 envelope unflavored gelatin 1/4 cup water 1- 8 oz. pkg. Philadelphia cream cheese 1/2 cup sugar dash of salt 1/4 cup of lemon juice 3/4 cup milk 1 cup heavy cream, whipped fresh or frozen peaches, strawberries or blueberries ------------------------------ Combine crumbs, sugar, & margarine; press onto bottom of 9" spring-form pan. Soften gelatin in water; stir over low heat until dissolved. Combine softened cream cheese, sugar, & salt, mixing at medium speed on electric mixer until well blended. Gradually add lemon juice, milk, & gelatin; chill unitl slightly thickened. Fold in whipped cream; pour over crust. Cill until firm. Top with fruit just before serving.
