Pineapple "Philly" Pie 1/3 cup sugar 1 T. cornstarch 1 cup (8.5 oz. can) crushed pineapple, undrained 1- 9" unbaked pastry shell * * * * * * 1- 8 oz. pkg. Philadelphia cream cheese 1/2 cup sugar 1/2 tsp. salt 2 eggs 1/2 cup milk 1/2 tsp. vanilla 1/4 cup chopped pecans ---------------------------- Combine sugar & cornstarch; add pineapple. Cook, stirring constantly, until clear & thickened. Cool; spread on bottom of pastry shell. Heat oven to 400F. Combine softened cream cheese, sugar, & salt, mixing until well blended. Add eggs, one at a time, mixing well after each addition. Blend in milk & vanilla. Pour over pineapple mixture; sprinkle with nuts. Bake at 400F, 15 minutes; reduce temperature to 325F & continue to bake 40 minutes. Cool before serving. Garnish with pineapple slices & pecan halves, if desired.
