Chilean Corn Casserole
Serves 8

2- 1 lb. 1 oz. cans cream-style
corn
1/3 cup grated Parmesan cheese
4 slices crisply cooked bacon,
crumbled
Tangy Tomato Relish
-----------------------------
Heat oven to 350F. Combine
corn, cheese, & bacon; mix
well. Pour into 1 quart
casserole; bake at 350F, 35
minutes. Serve with Tangy
Tomato Relish.

Tangy Tomato Relish
Makes 2 cups.

2 cups diced tomatoes
3/4 cup chopped onion
1 T. chopped parsley
1 T. finely chopped green
chili peppers
1 T. lemon juice
dash of garlic powder
--------------------------
Combine all ingredients;
mix lightly.
