Fisherman's Stew Serves 4-61 lb. fresh or frozen red snapper, mullet, or redfish fillets 1 lb. fresh or frozen raw shrimp 1 dozen fresh or frozen clams 1 cup coarsely chopped onion 1 clove garlic, minced 1/4 cup margarine 2 cups coarsely chopped fresh tomato 2 cans condensed beef broth 1/2 cup sherry 4 lemon slices 2 tsp. salt 3 whole allspice 1 small bay leaf dash of cayenne dash of thyme grated Parmesan cheese --------------------------- Thaw frozen fish & skin fillets. Cut in slices or large ckunks. Thaw frozen shrimp; peel & de-vein. Thaw frozen clams; clean. Saute onion & garlic in margarine in large saucepan until tender. Add tomato, beef broth, sherry, lemon, & seasonings; simmer gently, uncovered, 30 minutes. Add fish, shrimp, & clams; simmer 15-20 minutes or until fish flakes easily & clams open. Top each serving with cheese.
