Veal Parmesan Serves 66 veal cutlets (1 1/2 lb.) 1 egg 1/2 tsp. salt 1/4 tsp. pepper 1/2 cup dry breadcrumbs 1/2 cup (2 oz.) grated Parmesan cheese 2 T. margarine 1- 8 oz. can tomato sauce 1/4 tsp. basil 1- 6 oz. pkg. low-moisture part-skim Mozzarella cheese slices, cut in half ------------------------------- Heat oven to 375F. Dip cutlets in combined egg & seasonings & then in mixture of breadcrumbs & Parmesan cheese. Melt margarine in skillet; brown cutlets. Place cutlets in 12X8" baking dish. Combine tomato sauce & basil; pour over cutlets. Top each cutlet with slice of Mozzarella cheese. Bake at 375F, 30 minutes.
