Snow-Capped Tomatoes Serves 2412 tomatoes, cut in half 6 cups hot mashed potatoes 1 1/2 cups (6 oz.) shredded sharp cheddar cheese 1/4 cup chopped parsley ----------------------------- Heat oven to 450F. Top each tomato half with 1/4 cup potatoes & 1 T. cheese. Sprinkle with parsley. Bake at 450F, 15 minutes.
