Baked Chicken Salad

Baked Chicken Salad
Makes 24- 3/4 cup servings

12 cups diced cooked chicken
6 cups sliced celery
4 cups (1 lb.) shredded sharp
cheddar cheese
1/4 cup chopped onion
1/4 cup lemon juice
4 tsp. salt
1/2 tsp. pepper
2 cups mayonnaise
4 medium tomatoes, sliced
4 cups potato chips, crushed
-------------------------------
Heat oven to 350 F. Combine
chicken, celery, 2 cups cheese,
onion, lemon juice, seasonings,
& mayonnaise; toss lightly.
Spoon into 2- 13X9" baking pans.
Top with tomato slices. Bake at
350F, 35-40 minutes. Combine
remaining cheese & potato chips;
sprinkle over chicken mixture.
Return to oven until cheese melts.
