Makes 16 appetizers6 slices bacon
1/2 cup. chopped onion
1/3 cup chopped green pepper
3 eggs, slightly beaten
1 cup half & half
1/2 tsp. salt
Dash of Tabasco sauce
1 cup (4 oz.) shredded aged Swiss cheese
1- 9" unbaked pastry shell
Heat oven to 350F. Cook bacon until crisp; drain, reserving
2 T. bacon fat. Cook onion and green pepper in bacon fat
until tender. Combine eggs, half & half & seasonings;
mix well. Add cheese, onion, and green pepper. Pour into
pastry shell; crumble bacon and sprinkle over top. Bake at
350F, 40-45 minutes.
