Crostate con Formaggio 8 tarts1/2 cup (2 oz.) grated parmesan cheese 1 pkg. pie crust mix (2- 9" crusts) 1/3 cup chopped onion 1/3 cup chopped green pepper 1 1/2 cup sliced zucchini 1 garlic clove, minced 2 T. margarine 1- 1 lb. can whole peeled tomatoes, crushed 1- 3 oz. can mushrooms, drained 1/2 tsp. salt 1/4 tsp. oregano dash of pepper -------------------------- Heat oven to 375F. Add 1/3 cup cheese to crust mix. Prepare pie crust as directed on pkg. Divide dough in 8 portions; roll each to 7" circle. Line 8- 4" tart pans; flute edge. Cook onion, green pepper, zucchini, & garlic in margarine until tender; drain. Add tomatoes, mushrooms, & seasonings; simmer 10 minutes. Fill each tart shell with 1/3 cup of vegetable mixture; top with remaining cheese. Bake at 375F, 25 minutes.
