Apricot Crumble Cake
Serves 8-10

1- 8 oz. pkg. Philadelphia
cream cheese
1/2 cup margarine
1 1/4 cups sugar
2 eggs
1/4 cup milk
1 tsp. vanilla
2 cups sifted cake flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1- 10 oz. jar apricot or
peach preserves

2 cups shredded coconut
2/3 cup brown sugar, packed
1 tsp. cinnamon
1/3 cup margarine, melted

Heat oven to 350F. Combine
softened cream cheese, margarine,
& sugar, mixing until well
blended. Add eggs, milk, &
vanilla; mix well. Add flour
sifted with baking powder & soda,
& salt, mixing until well
blended. Pour half of batter into
greased & floured 13X9" baking
pan. Cover with preserves; top
with remaining batter. Bake at
350F, 35-40 minutes. Combine
remaining ingredients; spread
on cake. Broil until golden
brown.
