Georgian Spinach Souffle

Georgian Spinach Souffle
serves 8

1/4 cup margarine
1/4 cup flour
3/4 cup milk
1/2 lb. Velveeta cheese, cubed
1/4 tsp. pepper
1- 10 oz. pkg. frozen chopped
spinach, cooked, drained
6 slices crisply cooked bacon,
crumbled
1 T. finely chopped onion
4 eggs, separated

Heat oven to 350F. Make white
sauce with margarine, flour, &
milk. Add Velveeta & pepper; stir
until melted. Remove from heat;
stir in spinach, bacon, & onion.
Gradually add slightly beaten egg
yolks; cool slightly. Fold in stiffly
beaten egg whites; pour into 1 1/2
quart souffle dish. Bake at 350F,
45 minutes.
