Apple Cheddar Shortcake 6-8 servings2 1/2 cups biscuit mix 1 cup (4 oz.) shredded cheddar 2/3 cup milk 1/3 cup margarine, melted * * * * * * 3/4 cup brown sugar, packed 3 T. cornstarch 1/2 tsp. cinnamon 1/4 tsp. salt 1 cup water 4 cups sliced, peeled apples heavy cream, whipped ----------------------------- Heat oven to 425F. Combine biscuit mix & cheese; stir in milk & margarine. Spread dough into 2- greased 8" layer pans; bake at 425F, 20 minutes. Combine brown sugar, cornstarch, cinnamon, & salt. Stir in water; cook until clear & thickened. Add apples; cover & simmer until tender. Spoon half of apples over one layer. Top with second layer & remaining apples. Serve warm with whipped cream.
