Tomato Mushroom Soup

1 medium onion, thinly sliced
1 clove garlic, minced
1 tbs. butter or margarine
1 tbs. oil
4 cups sliced fresh mushrooms
1 1/2 cups beef broth
1 cup water
1/4 cup red wine
1/4 cup tomato paste
1/4 tsp. pepper
1/4 cup freshly grated parmesan
2 tbs. chopped parsley

Heat the butter and oil in a medium saucepan. Add onion and garlic
and saute until tender. Add the mushrooms all at once and stir to
coat with oil. Saute until the juices start to flow then add the
broth, water, red wine and tomato paste. Heat through and allow to
simmer for 15 - 20 minutes. Season to taste. Serve in large bowls
sprinkled with parmesan cheese and parsley. Serves 4.
