Mozzarella Chicken

6-8 boneless skinless chicken breast (or 2-1/2 lbs. broiler fryer chickens)
2 eggs, beaten
1/2 cup bread crumbs
1/2 cup margarine
1 (16oz) can tomato sauce
1 tsp. dried basil
1/2 cup shredded mozzarella cheese
1/2 tsp. paprika

Dip chicken in egg then in bread crumbs. Heat margarine in a large skillet and brown chicken on both sides over a medium heat. Add tomato sauce and basil. Cover and simmer for about 30 minutes (until done)Prepare Mozzarella Sauce. Preheat oven to 550 degrees.

Arrange chicken in a 13 x 9 baking dish (spray with non-stick spray). Pour the mozzarella sauce over the chicken, top with cheese and paprika. Bake until cheese has melted and is bubbly. Serve over pasta.

Mozzarella Sauce

1 tbl. margarine
1 tbl flour
1/4 tsp. red pepper
1/2 cup chicken broth
1/2 cup half-and-half
3/4 cup shredded mozzarella cheese

Melt margarine in small saucepan. Add in flour and red pepper; stir until it forms a ball. Add broth and half-and-half. Heat to boil; stirring constantly, then add cheese and mix until it has melted.
