Mountain Stack Cake

FILLING:
1 lb. dried apples
2/3 cup white sugar
2/3 cup brown sugar
2 tsp. cinnamon
1/2 tsp. ground clove
1/2 tsp. allspice

CAKE:
2 2/3 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 tsp. ginger
1/3 cup molasses
1 cup brown sugar
1 cup butter
2 eggs

TOPPING:
powdered sugar

Grease and flour 6 pie pans-of same size. Set oven at 325 degrees.

FILLING: Put all ingredients in a saucepan, cover with water, cook
over medium heat, until very soft, stirring often. Mash till smooth
set aside to cool.

CAKE: Sift dry ingredients and set aside. In large bowl, blend
molasses, brown sugar, butter and eggs. Stir in dry ingredients to form dough. Chill 30 minutes. Divide into 6 equal parts. Put 1/6th of dough into each pie pan. Press to edge of pan. Bake at 325 degrees, 15-20 mins. until light brown. Let cool some, now start with one cake, then cover with apple filling, repeat until thru.

TOPPING: Sprinkle powdered sugar on very top cake.
