Click here for a printable version of this recipe

1 cup maple syrup
1 loaf French bread, approx. 18 inches long
3 eggs
3 egg whites
1-1/2 cups skim milk
2 tsp. vanilla extract
3/4 tsp. ground nutmeg

Lightly spray or wipe a large baking dish with vegetable oil. Pour the syrup into the dish. Slice the French bread into eight 2-inch thick slices and place them over the syrup. In a seperate bowl, combine the eggs, egg whites, milk, vanilla and 1/4 tsp. nutmeg, and beat until well mixed. Pour the egg mixture over the bread, pressing the bread down gently so it soaks up the batter. Cover and refrigerate overnight.

Preheat the oven to 350 degrees. Remove the pan from the fridge and sprinkle the remaining 1/2 tsp. nutmeg over the bread; bake for 40 to 45 minutes, or until golden brown.
