Tangy Rice-Sesame Pudding
Serves 6Combine well:
3/4 cup raw brown rice, cooked
(about 1 3/4 cups)
2-2 1/2 cups orange juice
6 T. ground sesame seeds
2/3 cup brown sugar, packed
grated rind of 1 orange
4 eggs, well beaten
1/2 tsp. each cinnamon and ginger
1/4 tsp. nutmeg
1 tsp. vanilla extract
1/2 cup raisins (optional)
Garnish:
2 fresh oranges, peeled, and
sectioned

Combine all ingredients well.
Place in oiled baking dish and
bake at 350F for 1 hour, or
until firm. Especially good
served warm. Arrange fresh orange
slices on each dessert bowl for
an elegant ending to your meal.
