Soybean Pie
Serves 6Easy "Pat-In" dessert pie crust
Combine:
1 1/2 cups soybean puree
3/4 cup honey
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp.ginger
3/4 tsp. nutmeg
2 eggs, slightly beaten
3/4 cup milk
4 T. instant dry milk

(Make puree by grinding 2
heaping cups very well-cooked
soybeans through the fine blade
of a food grinder or in a
blender.) Pour combined ingredients
into crust. Bake at 450F for 15
minutes; reduce heat to 350F and
bake 30 minutes longer, or until
a knife comes out clean. It tastes
incredibly like pumpkin!
