Humming Bird Cake

Momma's Humming Bird Cake

Flour, (3) cups
Sugar, (2) cups
Canning salt, (1) tsp
Baking soda, (1) tsp
Cinnamon, (1) tsp
Large brown eggs, (3), beaten
Salad oil, (1 ½) cups
Vanilla, (1 ½) tsp
Crushed pineapple, (1) 8oz. Can un drained
Chopped hickory nuts, (2) cups
Chopped banana, (2) cups


Combine dry ingredients in a large bowl. Add eggs & oil. Stir until mixed good.
DO NOT BEAT.
Stir in vanilla, pineapple, and (1) cup of nuts, and bananas. Spoon batter into (3) pans.
Bake (350 degrees) 25 to 30 minutes. Cool 10 minutes.

Icing

Cream cheese, (2) 8oz. Pkgs. Softened.
Soft, fresh churned sweet butter, (1) cup
Powder sugar, (1 lb.) box
Vanilla, (2) tsp
Mix well & spread on cake. Use 2nd cup of nuts to sprinkle on top of frosting.
