Needed per serving:1 - boneless, skinless chicken breast half
1 - large handful of fresh spinach, well rinsed
but not dried
1 - slice of white cheese (like Monterey Jack,
Farmers or Swiss; low-fat is fine)
Sprinkle of seasoning salt
Season the chicken breast liberally with seasoning salt. Spray a
skillet with non-stick spray. Over medium heat, cook the chicken
breast, covered, approximately 4 minutes. While this is cooking,
place the washed spinach on a plate and microwave on high for 30
seconds, or steam on top of the stove, just till slightly wilted.
Drain spinach well, squeezing out all the moisture possible. Flip the
chicken breast, and pile the spinach on top. Layer the slice on
cheese over the spinach, making sure it doesn't hang over the edge.
Continue to cook just till the cheese starts to melt.
