Homemade Butter Cream Mints

1/2 cup butter or margarine
1 tsp salt
2/3 cup sweetened condensed milk
7 cups powdered sugar, sifted
peppermint extract to taste (or other flavor as desired)
food coloring
granulated sugar for dipping

Cream butter and salt together until well blended. Add milk. Add
sugar (powdered). Mix well, then remove from bowl and knead to mix
well. Add flavor. Divide into separate batches for each color desired. Add a few drops of coloring at a time until desired color is reached, kneading to mix well. You can now roll in balls, roll into logs and then slice, or, as I do, press into molds.

To mold: Shape a marble sized piece into a ball, roll ball in granulated sugar (a light coating will do well) then press into mold. Place in freezer for about 5 minutes, then unmold. Mints can be stored
in air tight container, with wax paper between layers of mints for quite a while (exact amount of time unknown because my husband never
lets them stay very long!!!) Makes about 200 mints, depending on
size of mold. Molds can be ordered from Wilton cake co., or bought
from a party supply store.
