Real Ginger Ale

1-1/2 pounds fresh ginger
6 cups water
1 cup sugar
selter water
lemon slices
ice cubes

Ask a grown-up to help you peel and chop the ginger. In a large saucepan, stir the ginger with the water and sugar. Simmer over low heat for 30 minutes, stirring occasionally. Turn off the heat and let the mixture cool completely. Set a strainer over a container. Strain the liquid to remove the ginger pieces. You now have ginger syrup.

To make the ginger ale, pour about 1/4 cup of the syrup into a tall glass. Fill the glass with seltzer water, a lemon slice, and ice cubes. Stir with a tall spoon and serve. Makes 16 cups of fresh ginger ale.
