PUMPKIN MAPLE SWIRL MUFFINS

FILLING

1 package (3 ounces) cream cheese, softened
2 tbsp. packed brown sugar
2 tbsp. maple syrup

MUFFINS

2 cups flour
3/4 cup packed brown sugar
1/2 cup chopped pecans or walnuts
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
1/2 cup Solid Pack Pumpkin
3/4 cup evaporated milk
1/4 cup vegetable oil
1 tbsp. maple syrup
TOPPING

2 tsp. packed brown sugar /4 cup chopped pecans or walnuts

1. For filling: combine cream cheese, sugar and maple syrup in small bowl until blended.
2. For muffins: combine flour, sugar, nuts, baking powder, cinnamon, baking soda and salt
in large bowl. Mix eggs, pumpkin, evaporated milk, oil and maple syrup in medium bowl;
add to flour mixture, mixing until just blended. Fold filling in just until batter is swirled.
3. For topping: mix together sugar and nuts in small bowl.
4. Spoon batter into 12 greased or paper-lined muffin cups. Sprinkle nut topping over
muffins.
5. Bake in preheated 400º oven for 20 to 22 minutes or until wooden pick inserted in
center comes out clean. Cool in pan for 5 minutes; serve warm. Yield: 1 dozen.


Blueberry Muffins

1/4 cup vegetable shortening -- solid
2 large eggs
2 cups all-purpose flour
2 1/2 teaspoons baking powder
2 tablespoons sugar
1 orange -- juice and rind
1/2 cup milk
1/2 cup orange juice
1 cup blueberries

Grate the orange peel and set aside. Squeeze orange; you will need 1/2 cup juice. Cream
shortening in mixing bowl. Add eggs and mix well. . Sift flour, baking powder and sugar
together; stir in orange peel.
Add flour mixture, milk and orange juice alternately to shortening. Stir well after each
addition. Batter will be stiff. Fold in blueberries. Grease small muffin cups or use paper
liners. Fill each 1/2 full of batter. Bake in preheated 375-degree oven for about 20
minutes or until browned.

Cranberry Apple Muffins
2 cups flour
2 teaspoons baking powder
1/4 cup sugar
1/2 teaspoon salt
3 tablespoons melted and cooled butter
1 egg, beaten
1/2 cup buttermilk
1/2 cup apple cider
1 cup coarsely chopped cranberries
2 medium apples, cored, peeled, and chopped
sugar and cinnamon

Preheat the oven to 400 degrees. Grease or paper 12 muffin cups. Place the
flour, baking powder, sugar, and salt in a bowl and whisk briskly. In a small bowl
whisk the cooled butter, the egg, buttermilk, and cider until well blended. Mix
into the dry ingredients until just moistened. Fold in the apples and cranberries.
Spoon into the muffin cups and sprinkle liberally with the sugar and cinnamon.
Bake for 15-20 minutes or until a toothpick inserted in the center comes clean.

Wyatt's Pumpkin Muffins

1 1/2 Cups sugar
3/4 Tsp cinnamon
3/4 Tsp nutmeg
3/4 Tsp ginger
3/4 Tsp Salt
2 eggs
1/2 Cup vegetable oil
1/4 Cup plus 1 Tbsp water
1/2 Cup Pumpkin -- canned
2 Cups flour
3/4 Tsp baking soda
1 Cup pecans -- chopped

In a mixing bowl:
Mix sugar, spices and salt together. Set aside
In a separate mixing bowl:
With hand wire whip, whip eggs for 10-15 seconds. Add in oil, water and
pumpkin.
Add sugar mixture and mix for 60 seconds. Do not use electric mixer and do
not overmix. Gradually add in flour and soda. Fold in pecans. Dip out into
well greased muffin pans. Bake at 350 degrees for 25-30 minutes, or until
golden brown. Makes 12 muffins.

DEBBIE'S MUFFINS

1 egg
1 c milk
1/4 c butter, melted and cooled slightly
2 c sifted flour
1/4 c sugar
3 tsp baking powder
1 tsp salt

Beat egg slightly with fork, stir in milk and butter. Sift the flour, sugar,
baking powder and salt together. Add to egg, stir just until flour is
moistened and lightly incorporated. DO NOT OVERBEAT! Fill greased muffin
tins almost to top. Divide batter evenly among 12 cups. Bake at 400 deg.
for 20-25 min. Remove from pans immediately. These freeze very well.
:

Add 1 c mashed very ripe bananas and 1/3 c chopped pecans. Mix only till
blended.
OR.........
Add diced apples, blueberries, nuts, spices, cheese, or cooked,
crumbled bacon.
OR..........
Fill cups 1/2 full of batter, drop teaspoonful of jelly or preserves in
center, add another large spoonful of batter.
