Garlic Roasted Chicken

Amount Measure Ingredient -- Preparation Method

1 chicken (2 1/2 to 3 pounds) -- cut into 8 pieces
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 head of garlic, unpeeled & cut crosswise into
3 slices, broken up

Preheat the oven to 350*F. Place the chicken in a 9 X 13-inch baking pan; set aside. In a small bowl, mix together the oil, salt, pepper, oregano, and basil; set aside. Distribute the garlic over the chicken, cover with the oil mixture, distributing evenly over the chicken, and bake for 50 to 60 minutes, or until the chicken is golden and no pink remains, turning occasionally. Discard the garlic before serving.

NOTES : Real garlic lovers can save the garlic -just pop off the skin and serve it with the chicken.
