Oven-Simmered Beef Stew

1 1/2 lb. boneless beef chuck cut into 1 inch cubes
1 pkg dry onion soup mix
1 pkg dry mushroom gravy mix
1/8 tsp pepper
2 cups water
6 carrots cut into chunks
1/2 pound mushrooms, sliced or 1 can of mushrooms
chopped fresh parsley, optional
Place beef in 3 quart casserole with a tight fitting lid. In a small bowl combine onion soup mix, mushroom gravy mix and water. Pour over meat. Cover casserole. Bake in 350 degree oven for about an hour. Remove casserole from oven, stir in carrots and mushrooms. Cover and return to oven for about 1 1/2 hours more or until meat and vegetables are tender.
Sprinkle with parsley. Serve with hot biscuits.
NB. Wine can replace part of the water. Other vegetables may be added along with the carrots and mushrooms.
This stew is even better when reheated.
