1/2 C oatmeal 1 carrot, finely chopped 1 Stalk celery, finely chopped 1/2 onion, chopped 3 Tbsp. chopped parsley 1/2 C tomato juice or sauce 1 egg, slightly beaten 2 tsp. prepared mustard 1/4 tsp each salt and pepper Grease a loaf pan. Combine all the ingredients. Turn into the loaf pan. Bake at 375F for 50 - 60 min. Drain off any fat and let stand 5 min. before slicing. This meatloaf is good either hot or cold. Makes 6 servings |
