Chilaquiles (entree)

This is simple and delicious.

6 6-in. tortillas (I prefer corn)
cooking oil
4 slightly beaten eggs
1/4 tsp. salt
2-1/4 cups salsa
1-1/2 cups crumbled soft white farmer cheese
1/2 cup water
1/4 cup sliced green onion

Slice tortillas into 1-inch strips with kitchen scissors or a pizza cutter. Fry in a small amount of hot oil until golden. Remove and drain on paper towels. Pour off the oil, leaving enough to coat the bottom of the pan.

Holding aside 1/2 of the cheese and all the onions, stir all ingredients together over medium heat. Simmer 15 minutes, then serve topped with cheese and onions.
