6 6-in. tortillas (I prefer corn) Slice tortillas into 1-inch strips with kitchen scissors or a pizza cutter. Fry in a small amount of hot oil until golden. Remove and drain on paper towels. Pour off the oil, leaving enough to coat the bottom of the pan. Holding aside 1/2 of the cheese and all the onions, stir all ingredients together over medium heat. Simmer 15 minutes, then serve topped with cheese and onions. |
