Chinese Lotus Salad 1 lb. fresh young spinach leaves 2 11 oz. cans mandarin oranges, drained 3 5 oz. cans water chestnuts, drained and sliced 1 1 lb. can beans sprouts, drained 1 cup oil and vinegar salad dressing 1 tsp. sugar 2 T. soy sauce ------------------------------------ Trim spinach leaves. Wash in several changes of water to remove all sand. Fill salad bowl with spinach leaves and arrange rows of mandarin oranges, sliced water chestnuts, and bean sprouts on top. Chill. Mix dressing, sugar, and soy sauce and beat to blend. Pour over salad just before serving time. Serves 8.
