Coffee Eggnog 2 eggs, separated 1/8 tsp salt 1/3 cup sugar 4 tsp. instant coffee 2 cups milk 1 tsp. vanilla extract nutmeg ---------------------------- Beat egg yolks. Add salt and gradually, 1/2 the sugar, beating constantly until fluffy. Combine coffee, milk, and vanilla extract. Add to the egg-sugar mixture, blending thoroughly. Chill. Beat egg whites until frothy, then gradually add remaining sugar. Beat until stiff. Fold into egg-yolk mixture. Ladle into cups; sprinkle with nutmeg. Makes 1 quart.
