3/4 Cup Sugar 3 Bananas -- mashed, ripe 2 Cups Flour 1 Teaspoon Baking Powder 1/2 Teaspoon Baking Soda 1/2 Teaspoon Salt 3/4 Teaspoon Cinnamon 1/8 Teaspoon Nutmeg 3/4 Cup Butterscotch Chips 1/2 Cup Chopped Walnuts -- (optional) In a large mixing bowl, mix eggs, sugar & bananas. Add dry ingredients, and continue to mix until all ingredients are moistened. Stir in chips and nuts and pour batter into 2 greased loaf pans. Bake at 350 degrees F for 28-30 minutes. To test for doneness, use a toothpick in center of loaf. Variation: Omit cinnamon and nutmeg and substitute semi-sweet chocolate chips to make Chocolate Chip Banana Bread. Note: This recipe freezes very well. |
