6 medium potatoes, sliced 1/4 " thick, with skins on 2 medium onions, sliced 1/4" thick 1/2 tsp ground pepper 1/4 cup snipped parsley, or 2-3 Tblsps dried 1/4 tsp salt, or to taste 3/4 cup water In large skillet, melt fat and coat bottom and sides. Layer half of potatoes and onions, then sprinkle with half the pepper, parsley and salt. Repeat with remaining potatoes, onions, pepper, parsley and salt. Add water. Bring almost to a boil, cover, reduce heat to low, and simmer about 30 minutes until potatoes are tender, and water is absorbed. If water is absorbed before potatoes are done, add a bit more water. |
