Lemon Bread

1/2 c. margarine, melted
1 c. sugar
Grated peel of 1 lemon
1 tbsp. lemon juice
2 eggs
1 1/2 c. flour
1 tsp. baking powder
1 tsp. salt
1/2 c. milk
1/2 c. chopped nuts (optional)

Glaze:
1/4 c. lemon juice
1/2 c. sugar

Preheat oven to 350 degrees. Grease and flour 1 loaf pan. In large bowl, mix together margarine, sugar, lemon peel, and lemon juice. Beat in eggs. In separate bowl, blend flour, baking powder, and salt. Add flour alternately with milk to butter mixture, stirring just to blend. Fold in nuts. Pour batter into loaf pan. Bake 1 hour or until toothpick comes out clean.

To prepare glaze, mix lemon juice and sugar in small saucepan. Cook over medium heat until sugar is dissolved and mixture is blended. Pour over hot loaf, allowing to seep in. Cool about 10 to 15 minutes before removing from pan. Wrap in foil and let sit one day before slicing.
