1 medium tomato 1 medium carrot 1/2 cup uncooked Quick-Cooking Couscous, 2 T sliced green onion 2 T sliced pitted ripe olives 1/2 cup Italian Salad Dressing or your favorite homemade Italian dressing Serve over Romaine lettuce leaves Chop cucumber and tomato. Slice Carrots, very thin. In a salad bowl mix all ingredients including the uncooked Couscous. Pour Salad Dressing over mixture. Cover and chill in refrigerator for at least 1-1/2 hours. Serve in individual bowls over chilled lettuce leaves. |
