Check out your old vegetables

Click here for a printable version of this recipe

Before you throw those old vegetables from your fridge away, check and see if there are
any useable portions. While vegetables may be too old to cook and eat, you can use them
to make vegetable broth to add more flavor to future recipes. Just be sure to peel veggies
and remove the softer parts before boiling with water. Remember that flavor adders such as
garlic, onions, and bell peppers aren't good for broths because they either fall apart or add a strong
flavor to the broth as the broth sits. I do this with my old carrots, celery, and potatoes and feel
better about not wasting what I've bought.
