Macarronada Ranchers- Ranch-Style Macaroni

Mexican-style macaroni and cheese- mmmm, good.

8 oz. elbow macaroni
2 cups. grated mild Cheddar cheese
1/2 tsp. crushed oregano leaves
1 tsp. salt
1/2 tsp. pepper
2 garlic cloves, mashed
1/4 cup melted butter
1/2 cup chopped onion
2 tbsp. salad oil
1 cup chopped tomatoes
1 bay leaf
1 cup milk

Heat oven to 325 degrees. Boil macaroni according to package directions. Drain. Combine hot macaroni with butter, oregano, salt, pepper, and garlic. Set aside. When cool, fold in cheese.

Saute' onion in oil and add tomatoes, 1/2 cup water, and bay leaf. Add salt and pepper to taste. Cook, covered, for 5 minutes. Spoon over macaroni mixture in baking dish. Remove bay leaf.

Pour milk over all and bake 15 minutes. Serve hot from the dish. Makes 8 servings.
