This dish is versatile and can be used as a filling for burritos or a tostada topping, or it can be served as a main dish.

1 tbsp. lard
1 lb. ground round or other lean beef
2 tbsp. oil
1 onion, finely chopped
1 potato, peeled and diced
1 ripe fresh tomato, diced
1 tsp. salt
1/2 tsp. pepper
1 tsp. Mexican cinnamon (canela)
1/2 tsp. ground cloves
2 garlic cloves, finely chopped
1/2 cup seedless golden raisins
1/4 cup sliced stuffed green olives
1/2 cup water

Head lard and add meat. Cook, stirring constantly, until no longer pink. Set aside. Drain grease if any settles around the meat.

In 2 tbsp oil fry onion, potato, tomato and seasonings. Cook 5 minutes and add to the meat. Add the rest of the ingredients. Mix well and season to taste. Cover and cook over medium heat for 10 minutes.
