2 1/2 to 3 pounds round steak, cut into strips 1/2 cup flour 1/4 cup oil white onions, thinly sliced, enough to sufficiently smother the meat 1/2 tsp. oregano leaves Salt and pepper the steak strips and roll in the flour. Heat the oil in the skillet and brown the meat slightly, turning only once. Place in a baking dish and set aside. In the same skillet, adding more oil if needed, saute the sliced onions until soft but not brown. Add the oregano leaves and pour over the meat. Cover and bake in a moderate (350 degrees or so) oven for 10 minutes. Delicious when served garnished with pickled canned jalapeno strips. Makes 4 to 6 servings. |
