Aloha Pineapple Cake

Cake
2-1/2c cake flour
1 TBSPN baking powder
1c butter flavored shortening
1-1/2c sugar
1/2 tsp salt
1 tsp vanilla
1c milk
1c crushed pineapple (unsweetened & drained)
4 eggs

Icing
4c powdered sugar
4-5 tbspn pineapple juice
1-1/2 tsp pineapple extract
1- 8oz package cream cheese

Cake: preheat oven to 350 degrees. Combine flour, baking powder, and salt. In a mixing bowl, cream together the shortening, surgar, eggs and vanilla with electric mixer until fluffy (beat for 2 minutes). Add the milk (beat for 1 minutes), then add the remaining dry ingredients, a little at a time to mixture (beat for 3 minutes). Add crushed pineapple (beat for 1 minute). Pour batter equally into two 9" round cake pans which have been sprayed with Pam. Bake in oven at 350 degrees for 25 to 30 minutes or until done. Cool in pans on cooling racks for 20 minutes, remove and finish cooling layers on racks.

Icing: In a mixing bowl cream together; cream cheese, pineapple juice, pineapple extract, beat for 1 minute, then add powdered sugar one cup at a time, beat for 2 minutes. Spread icing between layers, on sides and top of cake. Garnish of candied fruit & leaves is optional.
