Blue-Berry Yogurt Muffins

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup sugar
1 egg -- lightly beaten
1/4 cup orange juice
(unsweetened)
2 tablespoons vegetable oil
1 teaspoon vanilla extract
8 ounces plain low-fat yogurt
1 cup blueberries
(fresh or frozen, thawed)
1 tablespoon sugar

Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg and next 4 ingredients; add to dry ingredients. Stir just until dry ingredients. Stir just until dry ingredients are moistened. Gently fold in blueberries.

Spoon batter evenly into 12 muffin cups coated with cooking spray. Sprinkle 1 tbsp sugar evenly over batter. Bake at 400 for 18 minutes or until golden. Remove from pans immediately; cool on a wire rack. Yield: 12 muffins.


Per serving = 150 calories, 3 gm fat, 19 mg cholesterol, 199 mg sodium, 26 gm carbohydrate, 3 gm protein
