Sweet Potato Casserole

2 eggs, beaten
3c. sweet potatoes(drain liquid if canned)
1/2c. butter
1tsp. vanilla
1c. sugar

Mash potatoes and mix all ingredients. Place in casserole dish and top with:

1c. brown sugar
1/3c. butter
1c. pecans, chopped
1/3c. flour

Mix these ingredients together and crumble over potato mixture. Bake 45min. at 300F.
This recipe makes a small batch. Double or Triple for more.
