Decadent Fat-Free Whipped Potatoes

2 1/2 lbs. Red Potatoes, peeled (if large, cut into quarters)
1/4 Cup Skim Milk, warm
2 tsp. Butter Buds, mixed with 2 T. hot water
2 T. Sour Cream, non-fat
1/2 tsp. Salt
1/4 tsp. Black Pepper, fresh ground
Sweet Paprika
1 T. Parsley, fresh minced
1) Place Potatoes in a large pot. Add cold water to 1" above potatoes. Place pan over high heat and bring to a boil. Reduce heat to med. and simmer for about 20 min. When Potatoes can be pierced easily with a fork, remove pan from the stove and drain.
2)Place the drained Potatoes in a large bowl. With an electric mixer on low, begin to break up the Potatoes. As they break up, slowly raise the speed of mixer to med. Add the Milk, Butter Buds, Sour Cream, Salt and Pepper and mix until smooth. Spoon the whipped Potatoes into a warmed serving bowl and dust with the Paprika and Parsley. You may use Yukon Gold Potatoes instead of Red Potatoes. They have a golden buttery look.
